Is there any way to not display password variables?

You can click on the "mask" button to the right of the variable you wish to hide. You'll then need to create a fresh release for the change to take effect so these are also hidden in the deployment logs.

You can't un-hide them, but you can re-enter them at any point.

I'm on Starter Edition v2.2.18.1 - I don't see any option to mask.

Never mind, it pops up when you click on the value section.
